MEET OUR SUPPLIERS

Ballycotton Seafood

In Cork we are blessed to be surrounded by some great food producers. We take pride in being able to support local and the guys at Ballycotton have been supplying us since the early days here at Thompson’s. Founded in 1985 Ballycotton Seafood is a family run operation providing the highest quality fresh fish each day. They also operate a stall in the English Market for all your seafood needs!

We serve our fish & chips with fresh Ballycotton Haddock fried in a batter made from our very own Thompson’s New England Citrus IPA, which is brewed onsite at the rear of our restaurant. Our fish & chips is served with homemade tartar sauce, pea purée and caramelised lemon. It is also our top selling main course for the past 2 years. We also serve a pan fried hake and prawn pil pil using the fresh produce from the guys at Ballycotton Seafood. Be sure to keep an eye out for our weekly specials also.

West Cork Distillers

Let us introduce you to the guys at West Cork Distillers, Skibbereen, Co. Cork. The brainchild of best friends John, Ger & Denis, this distillery came to life in 2003 in the back room of Denis’ house! From very humble begins at what started off as a passion piece for the whiskey industry in Ireland, the lads now employee over 140 staff to maintain the operation of not only their whiskey range but their other spirits too. West Cork Distillers, very much like ourselves, like to support the local economy as much as possible and everyday up to 4 trucks full of barley arrive at the distillery from nearby Cork farms.

Classics remain classics for a reason and the Whiskey Sour is a staple of the cocktail world. The original being made with bourbon we thought we’d put our own Irish spin on this drink and use West Cork Irish Whiskey which has been aged in bourbon casks in our very own Whiskey Sour. This whiskey gives a rich rounded flavour to the cocktail with a smooth finish consisting of notes of citrus, apple and nutmeg. Grain to glass while supporting small Cork businesses.

McCarthy Butcher's of Kanturk

One of our most recent suppliers to come on board is great guys at McCarthy’s of Kanturk, one of Cork’s most respected butchers.

Jack & his son Tim use traditional techniques and innovative new ideas built over 5 generations and have become one of Ireland’s most prominent and celebrated meat producers, winning many awards along the way.

The McCarthy’s bacon and rashers have won international awards and the black pudding has received acclaim from the Brotherhood of the Knights and was even served to the Queen of England at the banquet on her visit to Ireland in 2011.

We serve McCarthy’s Himalayan salt dry aged 10oz Angus Rib Eye steak here at Thompson’s accompanied with creamy mash, shallots, King oyster mushrooms and a choice of peppercorn sauce or bone marrow butter.

Best paired with our Vina Eguia Rioja Tempranillo.

Another great Cork producer we love to support!
